Hydraulic juice press construction:

The hydraulic juice press machine operation is very simple.
No electricity needed. Manually operated, it means fewer parts, fewer things to wear out, less complicated, and easy to clean up. You control how fast the tray is raised or how long it stays compressed. Fruit or vegetable pulp can be left compressed for extended time period.
Ground up fruits and vegetable pulp is wrapped in juice cloth and placed in the lower stainless steel tray.
The purpose of the cloth is to hold this semi-fluid paste/pulp in the center of the lower food tray. The cloth also acts as a filter allowing juice to be pressed through while containing the pulp inside.

The lower tray will be raised by the hydraulic pump simply by moving the actuating lever up–down about eight to ten times. Each stroke on the lever builds pressure in the cylinder and the lower tray moves up about 1/2 inch and remains in that position. The hydraulic cylinder is pushing the lower tray upward against the upper fixed mounted tray. At the same time the pulp is being compressed. Juice is forced through the juice cloth and drains out of the lower pan through a 1/2 inch drain port.
Ones the trays are fully compressed they will remain in their position until the pressure is released by opening the valve at the bottom of the hydraulic unit.
The hydraulic unit used in this press is 2 Tons = 4000 pound rated.
The biggest advantage of this hydraulic unit is that you control how fast the tray is raised and pulp is compressed. This hydraulic unit work similar to a ratcheting mechanism. It will keep compressing the pulp tighter and tighter with each stroke on the lever.
Once the trays are compressed they stay in this compressed position, you do not need to hold the handle.
You can keep the trays compressed for extended time and walk away from the machine.
Allowing the trays to remain compressed will guarantee that all juice will be squeezed out of the pulp.
When you are done, simply open the hydraulic pump’s valve and two return springs will pull the base/lower stainless food tray to the bottom, lowest position. The lower stainless food tray slides out of the machine and can be cleaned in a kitchen sink or dish washer.
